Wild Drinks – Ginger Bug and Berry Kvass

    Welcome to a workshop in wild drinks with a focus on ginger bug and berry kvass. During the course you learn the basics of how to create sparkling drinks without added yeast, using wild starter cultures made from ginger or other vegetables and fruits.

    Ginger bug is a living starter culture with origins in the USA and Caribbean, traditionally made from grated ginger, sugar and water, but works just as well with other vegetables and roots. Berry kvass is a traditional fermented drink from Eastern Europe, originally brewed from bread but here made with berries and wild ingredients.

    During the workshop we create our own sparkling drinks and living starter cultures to take home and continue cultivating. We go through how starter cultures are built up, cared for and used to ferment drinks with fruit, berries and spices, and experiment with flavours and ingredients along the way.

    No prior knowledge required, just curiosity and a desire to try something new.
